KERBAM: I baked today.
this plate is like 2-3 times larger than my imaginary head (WHICH IS PRETTY BIG) and it's been piled high with cookies. I ate so many today.
*sigh* to get this lovely shot at the cookies, I had to take 5 pictures because I was aiming in the dark (mum's in tv room so i didnt want to let her know i was still awake). Righteo.
The recipe for this is currently in the kitchen, but I can remember it. :D
you will need:
- 150g softened butter
- 1/2 cup caster sugar
- 1/2 cup brown sugar
- 1 tsp of vanilla essence (VERY IMPORTANT)
- 1 large egg
- 1 & 3/4 cups plain flour
- 1/2 cup milk choc chip*
- 1/2 cup dark choc chip*
* These can be easily replaced with nuts/sultanas etc. I experimented. almonds and chocolate works so well. mm. sultanas too!
METHOD:
- Cream the softened butter, meaning it goes a paler colour and is stiff-ish but not because it's cold but because it's been beaten.
- Add in the caster sugar and brown sugar gradually while mixing.
- Add the vanilla essence and keep beating
- Toss in the egg and beat for another 1-2 mins. The egg makes everything a bit stickier and have a smoother consistency, but it's also quite stiff (at least it should be :P)
- Put your beater/electric mixer away because for the next step you do not want to use it at all.
- get a spatula or some kind of nice stirring utensil and stir in the plain flour. BUT DONT STIR IT IN TOO MUCH, because it will become goey and gross. I use a choppy motion with my silicon spatula to mix my dry and wets together :D
- When it's all mixed nicely, toss in your nuts/chocolate bits and stir some more
- Roll into little balls (size? however big you want them to be. Take into consideration that they will expand in the oven.
- When they all look like balls, dip a fork into some plain flour (to make it not stick to your cookie balls) and push down the ball slightly so you flatten the top. I make criss cross patterns on the top and it doesnt show in the final cookie. Do that for all of them
- PUT INTO OVEN AT 180deg C BUT IF YOU HAVE A FANFORCED OVEN set the temperature to 160deg C. :D Leave them there unattended for 15 mins. After that time period, go back to check very often. If they've started to brown at the edge, you can take them out (when I say brown, I mean light brown not charred. lol).
The cookies are soft in the middle. yumyum
BTW BRANDS in flour do make a difference. I've been using home brand (because man.. i've been using their plain flour for ages) HOWEVEr I tried a different brand recently and I realised how different the results are! Homebrand plain flour absorbs up oil faster and I don't think it's that great anymore :O:O:O
